Cooking Caribbean Style 8-22-2009


We’ll be cooking Caribbean style next weekend at Southern Meadow. Dress to impress, and bring your appetite. In keeping with the island theme, we’re going to have a dry rubbed Pork loin, slow cooked over a charcoal fire, and basted with a citrus Mojo sauce. We could tell you the secret ingredients in it, but then we’d have to kill you…..We’ll also have Cola brined chicken quarters marinated in homemade bourbon BBQ sauce. Bringing chicken make it so juicy and flavorful, you’ll be back for seconds!! To finish it all off, we’ll be making Caribbean Black beans with bacon and Sofrito, and rice. Dat’s good, Mon!!

Andy and Walt “Mad Dog” Rhodes will be cooking all afternoon on his black iron cooker “Matillda”. Remember, cooking is hot work, so feel free to bring the cooks a frosty beverage if you want an early taste.
